 🍲Fancy making homemade pumpkin soup?🍲

We've got a delicious Aunty Beryl pumpkin soup recipe that we are sure you will love

Aunty Beryl’s Wholesome Pumpkin Soup

With a little bit of bite!

Serves 6 | Preparation: 20 minutes | Cooking: 40 minutes


Ingredients

* 1.2kg pumpkin, peeled, deseeded and cut into chunks
* 2 tablespoons olive oil
* 1 large onion, chopped
* 2 carrots, sliced
* 1 medium potato, peeled and diced
* 3 garlic cloves, crushed
* 1 tablespoon freshly grated ginger
* 1 teaspoon ground cumin
* 1 teaspoon mild curry powder
* ½ teaspoon smoked paprika
* ¼–½ teaspoon chilli flakes, depending on how much bite you like
* 1 litre vegetable or chicken stock
* 100ml double cream or coconut milk
* Salt and freshly ground black pepper
* Pumpkin seeds, crusty bread or a swirl of cream to serve

Method

1. Heat the olive oil in a large saucepan. Add the onion and carrots, then gently cook for 5–7 minutes until softened.
2. Stir in the garlic, ginger, cumin, curry powder, smoked paprika and chilli flakes. Cook for another minute to release all those lovely flavours.
3. Add the pumpkin, potato and stock. Stir well and bring everything to the boil.
4. Reduce the heat, cover and simmer gently for 25–30 minutes, or until the pumpkin and potato are completely tender.
5. Carefully blend the soup until smooth and creamy.
6. Stir in the cream or coconut milk, then season with salt and plenty of freshly ground black pepper.
7. Warm through gently without boiling. If the soup is too thick, simply add a splash more stock or hot water.

Serve with toasted pumpkin seeds, a swirl of cream and a thick slice of warm, crusty bread.

Aunty Beryl’s tip: Start with ¼ teaspoon of chilli flakes—you can always add more! A small pinch gives the soup a lovely warming bite without overpowering the sweet pumpkin.
